so the maps here are only 3 which is specular diffuse and normal maps , what about ambient occlusion and gloss maps ? there are too many types of other maps too :P how do you decide which ones to use ?

The AO map was baked into the diffuse.Gloss maps im not a real fan of so I don't use em.

I usually stick to the basics.You can get everything you need from Normal/Spec/Diffuse maps.Though I have been doing a lot more things with only Diffuse maps.You get so much more control over your textures.
